Les beaux légumes racines abondent sur les marchés d’hiver et nous laissent le choix de cuisiner des tonnes de bonnes choses. J’adore rôtir les légumes au four car je trouve que leur saveur est sublimée, et en plus ça laisse des milliers de possibilités d’assaisonnement !

Vous connaissez mon amour pour les salsifis frais et la betterave et je n’ai pas résisté à les associer avec des jolies carottes de couleurs trouvées au marché. L’orange se marie à merveille avec l’ensemble, and candied garlic and rosemary complete the blend of flavors. And why not double the quantity to grind them into soup the next day? ?!

Orange Roasted Root Vegetables, garlic and rosemary

Ingredients (pour 2)

  • 5 salsify
  • 6 colored carrots (yellow,violets, oranges, white)
  • 2 Red beets
  • 2 untreated oranges
  • 1 bulb of garlic
  • 2 rosemary sprigs
  • Olive oil
  • Salt and pepper

Description

Preheat the oven to 200°.

Peel the salsify, carrots and beets and cut them into lengths. Reserve the salsify in lemon water.

Blanch the vegetables in different pans for 10 minutes. Drain and place them in a baking dish.

Cut the head of garlic in half widthwise and put it in the dish.

Cut an orange into quarters and add it to the vegetables.

Squeeze the second orange and pour the juice over the vegetables. Add a good drizzle of olive oil, rosemary and season.

Bake 35 minutes.

    If you find tuberous chervil, buy some, oven roasted with other root vegetables and rosemary, it's delicious ! {tuberous chervil has a very mild taste}

    Ah, roasted vegetables! I never blanch them in water before putting them in the oven., I'll try. The orange idea is excellent! And if there are any left, ils sont parfaits mélangés à de la semoule de couscous et du boulgour à la manière d’un taboulé… And then, dernière chose Emile, les photos sont vraiment éclatantes. Bravo!

    Hmmm, les bons légumes ! Tout simple, tout comme j’aime, I adore ! Surtout qu’ici c’est l’été, alors ne nous privons pas sur les légumes !
