Abondance zucchini bites

courgette

Emilie and Lea's Secrets

Here is an idea for your aperitifs or to make a simple little starter that, I'm sure, will please young and old alike.

Abondance zucchini bites

Ingredients (For about 12-14 bites)

  • 2 medium zucchini
  • 2 eggs
  • 1/2 onion
  • 50 g of Abundance
  • 50 g of breadcrumbs
  • 2 c. to s. chopped parsley
  • 1 pinch of Espelette pepper
  • Salt and pepper

Description

Preheat the oven to 200°.

Wash and grate the courgettes. Let them drain for 10 min in a sieve and pour a little salt on top.

Finely chop the onion then beat the eggs into an omelette. Add the onion, breadcrumbs, previously grated Abondance cheese, parsley, Espelette pepper and a little pepper.

Squeeze the zucchini between your hands and add them to the preparation.

Divide the mixture into non-stick muffin tins., about two tablespoons per mold.

Bake 15 minutes environ.

Enjoy warm or cold.
