Chouquettes with pink pralines
Après les chouquettes classiques, que Monsieur à d’ailleurs dévorées (bah oui c’est moins bon le lendemain ces ptites bêtes là !), je me suis mise à la réalisation de la version customisée, les chouquettes aux pralines roses. Je suis sûre que vous connaissez déjà les pralines roses, car ici vous les avez déjà croisées dans la recette de la brioche Saint-Genix. Et cette fois je n’ai donc pu résister (à la demande insistante de Monsieur, toujours lui !), de relancer une tournée de chouquettes.
I must say that the caramelized side and the roasted almond taste of these pink praline chouquettes particularly appealed to me.… too much good !
And then as today is the two months of mini Mademoiselle, we celebrate with a pink dessert, and since it’s pink it’s only for girls, nah !!!
Chouquettes with pink pralines
Ingredients (for about fifteen)
- 55 g of flour
- 50 grams of milk
- 50 grams of water
- 45 g of butter
- 2 medium eggs
- 1 pinch of sugar
- 1 pinch of salt
- 50 g de pralines roses
Description
Prepare the choux pastry by heating the milk, the water, sugar, salt and butter together in a saucepan. When everything is well melted, add the flour all at once and mix with a wooden spoon. Turn the dough in the pan to dry it out for 2 To 3 minutes. Put the dough in a bowl and let it rest 3 minutes.
Preheat the oven to 250° in static heat.
Then add the eggs one by one into the choux pastry., stirring well between each. Pour the batter into a piping bag.
On a baking sheet, make cabbage 3 cm in diameter by holding your piping bag vertically to the plate, cut sharply. Be sure to space them out.
Crush the pink pralines to form a coarse powder, spread generously over the cabbages.
Put in and turn off the oven. Let it cook 20 minutes. At the end of 20 minutes turn the oven back on at 180° in static heat and let dry 12 minutes. Do not open the oven door before the end of cooking cabbage !
Take them out of the oven and let them cool..
