Chocolate and coconut milk sponge cake {without milk}

So yes, littéralement un sponge cake est un gâteau éponge, mais rassurez vous il est bien plus digeste !!! Une version à base de lait de coco et sans autre matière grasse pour un gâteau tout léger et sans complexe ! Et comme ça faisait longtemps que je ne vous avais pas proposer de pâtisserie, j’avais envie d’une petite douceur pour nous réconforter de ce froid d’hiver.

J’avais réalisé ce sponge cake pour ma kiné, et je crois que toute l’équipe à adoré et va apprécier de retrouver la recette ici.

Chocolate and coconut milk sponge cake {without milk}

Ingredients

  • 120 g coconut milk
  • 100 g good dark chocolate
  • 70 g of flour
  • 70 g cane sugar
  • 2 eggs
  • 40 g bitter cocoa
  • 10 g grated coconut
  • 1/2 c. at c. baking powder

Description

Preheat the oven to 180°.

Butter and flour a rectangular mold 20 cm.

Melt the chocolate with the coconut milk in a bain-marie or in the microwave.

In a salad bowl, mix the flour, cocoa powder, sugar and yeast then gradually add this mixture to the melted chocolate. Add the eggs one by one, mixing well between each.

Pour into the mold, sprinkle with coconut and bake for 30 min cooking.

    It has an appearance that is really desirable. (it doesn't look dry !) That said, I like coconut milk when I make my coconut chicken. (curry) but I'm not really a fan of desserts, too bad 🙁

      The dessert still has a coconut taste even if it is counterbalanced by the chocolate.
