Focaccia with spring onions and fresh goat cheese

Quoi…! Je n’ai jamais fais de focaccia maison…!!! Bah non j’avoue, méa culpa… I love that, mais je l’ai toujours achetée nature et je la customisais au gré de mes envies à la maison. Bon, donc il fallait que je corrige ça ! Me voilà donc lancée pour une focaccia aux oignons nouveaux (oui, oui il y en avait encore dans mon panier de légumes !) et au chèvre frais car je dois dire qu’il y a une super productrice au marché et je ne peux pas résister !
Bon et puis c’est aussi une focaccia version santé, au blé complet, comme ça on se fait plaisir et on mange sain et je dois dire que rien ne vaut le fait maison (long live homemade, long live homemade…!) !

Focaccia with spring onions and fresh goat cheese
Ingredients (pour 1 medium focaccia)
- 250 g of whole wheat flour
- 40 g d’huile d’olive
- 13 cl lukewarm water + 2 c. to s.
- 1 packet of baker's yeast
- 1 c. at c. sugar
- 2 g de sel
- 1 bunch of fresh onion
- 1 fresh goat
Description
Put the baker's yeast, the sugar and the two tablespoons of water in a ramekin and set aside 10 minutes.
Mix the flour together, salt and olive oil then add the yeast mixture and lukewarm water. Knead about 5 minutes to obtain a nice elastic dough. Place the dough in a greased bowl, cover with a tea towel and let stand at room temperature 30 minutes.
Meanwhile, chop the onion lengthwise..
Degas the dough with your fist then roll it out in a rectangular shape. Let rise again 20 minutes under cover.
Preheat the oven to 220°.
Make small indentations with your fingers all over the dough then add the onions and the chopped goat cheese.. Drizzle with olive oil.
Bake 20 minutes.

You can enjoy the focaccia hot or cold as you wish and I find it the perfect accompaniment to a good soup !
