Voilà une recette qu’on devrait tous avoir dans nos placards (enfin plus le pot de caramel c’est plus pratique !). Une sauce caramel qui ne demande que 4 ingredients (que demandez de plus ma petite dame ?!), qui est non sans rappeler une célèbre sauce au caramel…the salted butter caramel ! Mais là point de crème mais du lait de coco et une pointe de vanille pour parfaire le tout, sans oublier un peu de fleur de sel.

Cette recette m’a servie à recouvrir le banana layer cake que je vous proposais il a quelques jours, et je peux vous dire que c’était la cerise sur le gâteau (ça n’est qu’une expression hein, there were no cherries on the layer cake !!!). Use as you see fit but I'll give you some ideas just in case. : Why not on a blanc manger vegan, of the baked apples or like that with a teaspoon !!!

Ingredients
  1. 300 g golden cane sugar
  2. 25 cl of coconut cream
  3. 1 vanilla pod
  4. 2 pinches of fleur de sel
Preparation
  1. Bring the coconut cream to the boil with the vanilla pod split in two and scraped then leave to infuse 10 minutes off the heat. Remove the vanilla pod.
  2. Make a dry caramel with the sugar. When the caramel is golden, add the coconut cream off the heat, stirring well.
  3. Then add the fleur de sel. Stir until smooth and creamy.
  4. Put in the jars and let cool.
  5. Keep cool.

    Thank you for this recipe. I made it with vegetable cream because I am allergic to coconut.. But even so it's a pure delight! It makes a sort of caramel jam-compote. Too good of course pancakes!
