Butternut squash soup with Espelette pepper and grilled ravioli

J’avais envie de vous faire découvrir un produit de chez nous que j’aime tant la raviole. Léa vous avait déjà préparé des mini-cocottes de ravioles gratinées et là je vous les propose d’une manière que j’adore, justes grillées à la poêle… hmmmm…a real treat. En plus à propos de ravioles, Grenoble à désormais sa boutique place Sainte Claire les Halles, je vous invite à y faire un tour, on y trouve que des bonnes choses.
And to accompany all this, un petit velouté de courge butternut relevé au piment d’Espelette, because yes spring is desired, so we take the opportunity to taste some good little soups !


And you the ravioli, how do you prefer it? ?
Butternut squash soup with Espelette pepper and grilled ravioli
Ingredients (pour 2)
- 400 g of butternut squash
- 50 key of water
- 1 plate of Royans ravioli
- 1 onion
- 1 c. to s. tomato paste
- 1 pinch of Espelette pepper
- 1 filet d’huile d’olive
- Salt and pepper
Description
Wash and cut the butternut squash into small pieces. Roughly chop the onion and put everything in a casserole dish with a drizzle of olive oil.. bring back 5 minutes over high heat, stirring.
Add water, tomato paste, the Espelette pepper and let it cook 30 minutes. Mix everything and adjust the seasoning.
Remove the ravioli, heat some oil in a frying pan over high heat and add the ravioli. Grill them 2-3 minutes, stirring frequently. Place them on a plate covered with absorbent paper to remove the fat.. Season with a pinch of salt.
Serve the velouté in bowls and add the ravioli on top.

Taste immediately.
