Si je vous dis Pâques, je suis sûre que vous me répondez chocolat !!! Ah le chocolaten œuf, lapin, poule ou cloche, à Pâques nous n’avons que l’embarras du choix. Alors des petites tartelettes au bon chocolat et au praliné, il n’en fallait pas plus pour faire un dessert parfaitement gourmand pour le week-end qui arrive.

Et puis après quelques mois sans, j’avais vraiment mais alors vraiment envie de chocolat !!!  Je vous annonce donc avec plaisir l’arrivée d’un heureux événement pour Septembre prochain. Voilà c’est dit !!!

Chocolate praline tartlets for Easter

Ingredients (pour 6-8 tartlets)

For the chocolate ganache

  • 150 g of praline paste
  • 100 g good dark chocolate
  • 25 whipping cream

For the chocolate shortcrust pastry

  • 250 g of flour
  • 200 g of butter
  • 100 g icing sugar
  • 2 egg yolks
  • 2 c. to s. cocoa powder
  • 1 pinch of salt

For the whipped cream

  • 25 whipping cream
  • 20 g icing sugar

Description

Start with the shortcrust pastry, for that, mix all the ingredients except the eggs together with your fingertips. Then add the egg yolks and a little water if necessary. Knead until you obtain a homogeneous ball. Film and keep cool for 2 hours.

Preheat the oven to 180°.

Roll out the dough between two sheets of parchment paper on 3-4 mm thick, cut circles the size of the molds and garnish the previously buttered and floured molds. Prick the surface with a fork and garnish with beans to prevent the dough from rising.. Bake 15 minutes. Remove the tartlets from the oven and let cool..

Prepare the ganache by mixing all the ingredients and heating everything in a saucepan over low heat.

Pour the ganache into the cooled tartlets and leave to cool 2 hours.

Beat the cold cream and the sugar together to make the whipped cream and add it to the tartlets before serving..

    I really hope I managed to do some outdoor hunting but let’s just say that the snowflakes didn’t leave us as quickly as other regions.… Everything is still almost completely white, It's not really a chance that on Sunday my daughters will run outside to look for eggs.… then it will happen in the house !
