Aujourd’hui Mini-Mademoiselle fête ses 1 an… 1 an de bonheur, 1 an que ce petit bébé a changé notre vie, 1 an que je suis maman. Bon anniversaire mon petit ange. J’avais juste envie de lui offrir un joli gâteau pour ce jour si spécial, celui-ci était pour une autre occasion, mais il aurait pu être pour elle. Aujourd’hui mon esprit est bien trop occupé pour vous écrire quelques lignes je vous laisse donc avec ce gâteauen même temps je crois qu’il se passe de commentaires, non ?!

Allez juste quelques explications de ce banana layer cake : a base of banana bread with pecan nuts, vanilla icing and a hint of sauce caramel… What happiness !

Banana layer cake au caramel {vegan}

Ingredients
  1. 200 g of flour
  2. 60 g cornstarch
  3. 5 bananas
  4. 200 g applesauce
  5. 100 g maple syrup
  6. 100 g pecans
  7. 60 ml of grapeseed oil
  8. 1 packet of yeast
  9. 2 teaspoons baking soda
  10. FOR THE GLAZE
  11. 400 g vegetable margarine
  12. 300 g icing sugar
  13. 3 tablespoons of vegetable milk
  14. 1 good pinch of vanilla powder
  15. From the caramel sauce
Preparation
  1. Preheat the oven to 180°.
  2. Put the flour, starch, yeast and baking soda in a bowl. Mash the bananas with a fork and add them to the flour. Then add the rest of the ingredients to the bowl.. Mix without working the dough too much and pour into a round mold of 17 cm in diameter non-stick.
  3. Bake 35-40 minutes.
  4. Unmold and let cool completely before cutting the cake into three discs
  5. Meanwhile prepare the glaze by beating the margarine with the icing sugar and vanilla, to obtain a smooth and frothy mixture. Add the vegetable milk and continue to beat 30 seconds.
  6. Start by placing a disc of cake on a dish then garnish it with a centimeter of icing. Cover with another disc then repeat the operation until the end. Cover the layer cake with a thin layer of frosting (you can almost see the cake through) then refrigerate 30 minutes.
  7. Finish by spreading the rest of the frosting evenly over the cake..
  8. Cover with vegan caramel (recipe to come !).
