J’adore la semoule au lait pourtant je n’avais pas cuisiné de semoule en dessert depuis le gâteau de semoule au chocolat et la semoule au lait végétal et ça fait un baille ! L’idée de la semoule au lait de coco m’est venu car j’adore le lait de coco en dessert et puis aussi car ce mois-ci c’est Julie du blog Jujube en cuisine qui nous propose de plancher sur le thème de la noix de coco pour cette 19ème édition de la Battle Food.

So for coconut lovers here is an “all coconuts” dessert with coconut in all its forms, in milk, in oil and grated !!! And a little more not insignificant? this dessert is vegan (yes I love making vegan desserts at the moment…you will be more why soon), no animal protein, it is therefore really very light and digestible. And as you see, vegan doesn't mean not greedy !!!

Semolina with coconut milk and chocolate-coconut glaze {vegan recipe}

Ingredients (pour 6 people)

  • 170 g medium wheat semolina
  • 75 cl of coconut milk
  • 25 cl vegetable milk
  • 100 g cane sugar
  • 1 vanilla pod
  • 150 g dark chocolate
  • 1 c. to s. coconut oil
  • grated coconut

Description

Put the coconut milk and vegetable milk in a saucepan, add the sugar and the vanilla pod, split in half and scraped, then gently bring to the boil. Let simmer 5 minutes then remove the vanilla pod.

Sprinkle the semolina then let it cook 3-4 minutes over low heat, stirring constantly, until the mixture thickens.

Pour the mixture into ramekins, film in contact and book at the expense 30 minutes.

Melt the chocolate in a bain-marie or in the microwave then add the coconut oil.

Unmold the semolina on a plate, pour the glaze on top and add a little grated coconut.

    Yum! I was just craving semolina cake these days, and in addition I try to cook vegan more often so this recipe is perfect! Just a quick note for those who are strictly vegan, you have to remember to check that the dark chocolate used is vegan, it's not always the case!

      Yes it is normal for the rendering to be compact, this is what I wanted as a texture to be able to unmold them but it remains very melting in the mouth !

      It's really necessary because it brings a real plus to the chocolate, but if you have to do without, don't add anything else to the chocolate. !

      6 oz wheat semolina
      25 fl oz of coconut milk
      8,5 fl oz of vegetal plant (like rice milk…)
      3,5 oz of cane sugar
      1 vanilla bean
      5,3 oz of dark chocolate
      1 tea spoon of Coconut Oil
      grated coconut

      Description

      Put the coconut milk and vegetable milk in a pan, add the sugar and the vanilla bean, then boil slowly. Let simmer 5 minutes and then remove vanilla bean.
      Tehn, add the semolina and let cook about 3 or 4 minutes and stir constantly, until the mixture is thick.
      Pour it into small bols and keep it into the fridge during 30 minutes.
      Melt the chocolate and add coconut oil.
      Put the desert on to a plate, add the melted chocolate on the top and add a little bit of shredded coconut.
