Zucchini stuffed with ricotta, with spring onions and pine nuts

J’ai trouvé au marché des courgettes jaunes rondes toutes mignonnes qui seraient parfaites pour faire des jolies photos mais aussi pour en faire une jolie recette car c’est bien le but quand même !!!

J’adore le fromage, alors farcir ces petites courgettes de ricotta à été une évidence, non non ne vous inquiétez pas, une petite lumière n’a pas fait « tilt » au dessus de ma tête et je n’ai pas eu d’apparitionje voulais juste une recette simple et bonne, comme d’habitude quoi .

So here is a perfect recipe to serve why not with semolina, It’s a change from rice even though I love it !

Zucchini stuffed with ricotta, aux cébettes et aux pignons de pins

Ingredients (pour 2)

  • 4 small round zucchini (here some yellow ones)
  • 250 g the ricotta
  • 50 g pine nuts
  • 2 spring onions
  • 1/2 bunch of flat-leaf parsley
  • 1 filet d’huile d’olive
  • Salt and pepper

Description

Wash and cut the zucchini caps. Empty the inside, taking care not to pierce the bottom of the zucchini (you can keep the inside for a ratatouille For example).

Put the emptied zucchini with their caps on to steam for 10-12 minutes.

Preheat the oven to 200°.

Finely chop the spring onions and parsley.

In a pan, bring back 2 min dry the pine nuts, stirring constantly.

Prepare the stuffing by mixing the ricotta, spring onions, pine nuts and parsley then season.

Arrange the zucchini in a baking dish and stuff them with the ricotta mixture.. Place the caps back on top and then pour in a drizzle of oil.

Bake 15-20 minutes.

    They are beautiful like all these zucchini ! I prefer 10 both cheese and meat stuffings, we better preserve the taste of the vegetable and the nutritional qualities since the cooking time is much shorter 😉
