Kofta tagine with zucchini {vegan}

Bon bah me revoilà…. ! Cela faisait un petit moment que je ne trouvais plus l’inspiration, la motivation… pour vous partager des petites choses ici ou sur Instagram. Mais voilà après quelques mois de pause, je suis là et je reprends du service pour vous partager ma cuisine ! Aujourd’hui on se retrouve donc avec une recette avec les dernièrees courgettes, et oui le redoux de ces dernières semaines à fait que j’en trouvais toujours au marché de producteurs ! On en profite donc encore un peu avant de mettre le nez dans les courges et on se prépare un petit tajine de kefats (oui, oui des boulettes) et de courgettes (well yes otherwise we wouldn't be talking about zucchini !).
This tagine is really quick and super tasty,
so why deprive yourself of it ?! In short, if you can no longer find zucchini, take revenge for next year or you can try a version with chayotes or butternut squash why not ! Here we served it with semolina (because children love it !) but it is also perfect as is with a good semolina bread to sauce the delicious sauce ! You follow me for the recipe ?!

Kofta tagine with zucchini {vegan}
POUR 4 PEOPLE

- 20 homemade vegetable meatballs or not
- 5 courgettes
- 4 tablespoons of crushed tomatoes
- 1 onion
- 4 cloves of garlic
- 1 tablespoon of cumin seeds
- 1 tablespoon of coriander seeds
- 1 tablespoon of turmeric powder
- 1 teaspoon coriander powder
- 1 good pinch of Espelette pepper
- Salt and pepper
- A few mint and parsley leaves
- Olive oil
- For the dumplings, if you decide to try homemade dumplings, I advise you to make them in quantity and freeze them !
- Brown your meatballs with a drizzle of olive oil in a pan for 10 minutes over medium heat, turning regularly and set aside.
- Chop the onions and slice the peeled garlic.
- In a tagine or casserole dish, put a good drizzle of oil and add the onion, cumin seed and crushed coriander seed, let it cook 5 minutes under cover.
- Meanwhile, cut the zucchini into cubes then add them with the garlic to the casserole dish., stir and add the turmeric, Espelette pepper and powdered coriander, stir.
- Then add the crushed tomatoes and add water to the height, salt and cook 20 minutes over medium heat and covered.
- At the end of 20 minutes, ajoutez les boulettes préalablement dorées à la poêle et laissez cuire 5 more minutes.
- Ciselez de la menthe et du persil sur le plat avant de servir et c’est prêt !
