Couronne des rois briochée à la fleur d’oranger
L’année dernière, je vous proposais la galette des rois à la crème d’amande mais cette année comme je n’avais pas envie de galette, j’ai fais, avec l’aide de Monsieur, une brioche au bon goût de fleur d’oranger. Pour accompagner tout ça, du bon sucre casson qui croque sous la dent et des fruits confits. Un régal cette petite brioche des rois, You can not find ?!
Comme le veut la tradition en Provence, This is the brioche that we taste during this period, It represents the king's crown and its jewels…And all of this to eat of course !!!
And as the last week of January is coming, Why not finish in style ?!
Couronne des rois briochée à la fleur d’oranger
Ingredients
- 250 g of flour
- 125 g soft butter
- 3 eggs + 1 yellow for gilding
- 30 grams of sugar
- 10 g of baker's yeast
- 2 g de sel
- 1 c. to s. orange blossom
- 30 g brown sugar
- Candied fruit (clementine, angelic, cherries, orange…)
- A bean
Description
Put the yeast with 2 tablespoons of lukewarm water, let it rest 10 min then stir.
For the brioche, put the flour in a bowl, make a well and add the yeast to the center. Work the dough between your fingers and incorporate the eggs,Orange blossom, sugar and salt. Knead the dough and stretch it, then add the butter. Knead the dough until it comes away from the bowl (you can transfer it to the worktop for more convenience).
Let the dough rise covered under a tea towel for 2 hours.
Degas the dough with the point and form a crown. Do not forget to put the bean inside at that time !
Arrange the dough on a baking sheet covered with parchment paper and let swell between 4 hour and night.
Preheat the oven to 170°.
Brown the brioche with the egg yolk diluted with 1 tablespoon of water then sprinkle with brown sugar.
Bake 30-35 minutes.
Let the brioche cool on a rack and then decorate with the candied fruit in the center.
Good crown !
