Voici venue l’heure des galettes des roisle mois de Janvier. Oui parce que je pense que je ne suis pas la seule à aimer manger des galettes et autres brioches des rois pendant tout le mois de janvier, ma préférée : la galette des rois à la crème d’amande. Plus légère que la frangipane, qui est en fait une crème d’amande associée à une crème pâtissière, cette galette des rois est parfaite pour les amateurs d’amande. Une galette des rois un peu comme un pithiviers, devenu un basique à la maison en cette période d’épiphanie, a recipe that Mr. and I always enjoy ! Pour 6-8 people
To print
  1. 155 g ground almonds
  2. 155 g of softened butter or vegetable margarine
  3. 100 grams of sugar
  4. 3 medium eggs + 1 jaune
  5. A few drops of bitter almond extract
  6. 2 puff pastry rolls (pure butter or vegetable)
  7. 1 or 2 beans
  8. 1 tablespoon of maple syrup (optional)
  1. Beat the butter (or margarine) until it becomes ointment. Then add the almond powder and sugar to form a smooth and homogeneous mixture..
  2. Add the eggs one by one then mix. Put a few drops of bitter almond in the mixture or rum if you prefer !
  3. Put the mixture in a piping bag.
  4. Preheat the oven to 180°.
  5. Spread the first puff pastry on a baking sheet.
  6. Add the almond cream forming a snail and stop at 3 cm you board. Add the beans.
  7. Wet them with water 3 cm edge and place the second roll of dough on top. Apply pressure to seal the edges of the dough well and fold with the back of a knife.
  8. Brush the pancake with the egg yolk.
  9. Then decorate the edges and the top with the blade of a knife.
  10. Put in the oven for about 30 min so that the pancake is nicely browned.
  11. Brush with maple syrup straight out of the oven to obtain a shiny pancake like the pastry chef's..
