Vegan lemon creams {sans gluten}

Après les beignets, voici un dessert qui n’est pas en reste de gourmandise, à condition bien sûr que l’on aime le citron ! On est en pleine saison du citron et comme mes parents m’en ont envoyé un plein colis, je me suis dit que cette crème citron vegan serait la bienvenue. Je n’ai pas de grands fan de citron à la maison (je me sens un peu seule), mais ce que je peux vous dire c’est que tous ont aimé cette version de crème citron légère et acidulée. On a l’habitude de faire des crèmes aux œufs, traditionnellement, there it is without eggs and it is not missing at all from the recipe

Vegan lemon creams {sans gluten}

POUR 6 PEOPLE

Easy lemon curd
  • 50 cl of almond milk
  • The zest of a lemon
  • The juice of half a lemon
  • 100 grams of sugar
  • 30 g cornstarch
  • 20 cl of coconut cream 22%
  • Mix all the ingredients together then heat the mixture.
  • Stir constantly until it boils and thickens (environ 3 minutes)
  • Divide into ramekins and film on contact.
  • Serve with lemon zest on top (yellow and lime) and why not a few grains of caviar lemon !

    Bonjour ! Petite question : what kind of coconut cream do you use ? Is the Eco Mill kitchen sufficient? I have the cream but solid Rapunzel but it takes a lot to get the amount of lemon cream …

      Bonjour,
      I use canned coconut cream ( brands la maison du coco, around the rice…), but there you can make a mix (50/50) between Rapunzel's coconut cream and that of Ecomil cuisine 🙂
