Je sais que vous êtes pas mal ces derniers temps à avoir donné vie à un levain (on me dit même dans l’oreillette que vous avez même fait du pain !), et comme ce levain déborde de vie, vous ne savez sûrement plus trop quoi en faire. As a result, j’ai la solution avec cette recette de crêpes mille trous inratable (and, si vous verrez !). Mais d’abord, pour ceux qui ne connaissent pas les crêpes mille trous, ce sont des crêpes avec tout plein de trous (ça porte bien son nom, hein !) originaires du Maghreb et qu’on appelle aussi baghrir. Ce qui est top avec ces crêpes au levain, is that they require almost no flour, and as I know it's a "rare" product lately you can keep it to make your homemade bread !

These thousand hole pancakes are the perfect recipe for a snack or a gourmet breakfast !

Traditionally, thousand hole pancakes are served with a honey syrup flavored with orange blossom, there I wanted something a little different with maple syrup, and it's really good ! These pancakes are a real delight, everyone loves them and they are also great texture level in DME (of the 12 month with us). Since then we make it almost every week., they almost dethrone our fluffy pancakes Sunday morning that is to say !

Sourdough pancakes {vegan}

FOR A FORTNIGHT

  • 500 g fine semolina
  • 50 g T65 wheat flour
  • 150 g chilled sourdough
  • 80 key of water
  • 1 tablespoon of sugar
  • 1 pinch of salt
  • 1 level teaspoon of baking soda
  • Sweet olive oil

FOR THE SYRUP

  • 20 cl of maple syrup
  • 2 tablespoons orange blossom water

  • In a blender, pour the water in order, leaven, flour, semolina, sugar and salt. Mix until you get a smooth paste.
  • Pour into a bowl and leave to stand at room temperature for 2 hours by covering with a cloth.
  • Heat a fat-free non-stick skillet over medium-high heat.
  • Add baking soda to the batter.
  • Pour a ladle in the center of the pan and cook on one side, bubbles will appear and the batter will cook on top.
  • Once the pancake is cooked, brush the top with a little olive oil.
  • Repeat until the batter is used up..
  • For the syrup, mix the maple syrup and the orange blossom water and boil everything 5 minutes in a saucepan.
  • Serve warm or cold with the syrup.

    Bonjour, Thank you for this recipe ! Leaven "refreshed", what does it mean exactly ? that we have just refreshed it just before making the recipe, or that it was done the day before (that it is not “dormant” in the fridge, quoi) ? Thanks in advance !

      Bonjour, the sourdough is refreshed the day before and left at room temperature before use if it was in the fridge 😉
