Gâteau au citron

Je dois vous avouer qu’à la base, je ne suis pas fan de gâteau au citron alors que j’adore le citron, au point que je le mange cru ! Pour me soigner, je tente de trouver des associations différentes et des dosages légers et c’est le cas de ce gâteau au citron tout moelleux. Le secret de son moelleux, une base de yaourt de brebis qui le rend fondant et aérien en bouche, parfait ! Ok, ce gâteau date un peu car je l’avais réalisé cette été pour un petit pique-nique entre blogueuses grenobloises et je dois dire que les filles ont été séduites (Sir too because I had put it aside anyway !). Well I know, It's no longer the blueberry season, So no worries you can do it with frozen blueberries, it still works. In addition, I have concocted a gluten -free version based on rice flour and almond powder, So no apology for intolerants !

Lemon and blueberry cake {sans gluten}
Pour 1 cake or fifteen mini

Ingredients
  1. 180 g of yaourt to the milk of sheep
  2. 150 g rice flour
  3. 150 g cane sugar
  4. 125 g of butter
  5. 55 g of almond powder
  6. 2 eggs
  7. The juice and zest of a lemon
  8. 1/2 baking powder
  9. 125 grams of blueberries
Preparation
  1. Preheat the oven to 180°.
  2. Beat the egg yolks with the sugar until the mixture turns white, Add the melted butter, juice and lemon zest and yogurt and mix.
  3. Mix the almond powder, flour and yeast then incorporate the liquid ingredients to the dry mixture.
  4. Beat the egg white in snow and gently fold in the dough.
  5. Pour the dough into the chosen mold then divide the blueberries.
  6. Bake 18 minutes for mini or 40 minutes for the cake version.

    Like you, I'm a total lemon addict but I'm not trying to cure myself. I continue and enjoy my hot lemon with honey for breakfast..
