Les plats de pâtes sont un grand classique à la maison, car Monsieur aime beaucoup les pâtes, et puis il faut dire que c’est un repas simple à faire en semaine. More, il faut sans cesse se renouveler pour ne pas manger toutes les semaines les mêmes recettes ! Et comme c’est la saison des belles aubergines, j’en profite pour partager avec vous ma version des pâtes aux aubergines. Une sauce à base de tomates fraîches, mascarpone, et des aubergines fondantesça vous donne pas envie tout ça ?!

Who is it, qui va manger de bonnes pâtes cette semaine ?!!!

Eggplant pasta

Ingredients (pour 2 people)

  • 200 g de bonnes pâtes
  • 1 grosse aubergine
  • 5 tomatoes
  • 1 onion
  • 1 clove garlic
  • 3 c. to s. mascarpone
  • Du basilic
  • 1 filet d’huile d’olive
  • 1 trait de vinaigre balsamique
  • 1 pinch of chilli
  • Salt and pepper

Description

Cut the eggplant into small cubes then brown them in a pan with a drizzle of olive oil for 8 minutes on low heat. Then add the chopped onion and the crushed garlic clove and brown them.

Meanwhile cut the tomatoes into cubes then add them to the eggplants. Also add a dash of balsamic vinegar, season and put a pinch of chili pepper in the sauce. Leave to simmer 15-20 minutes. Then add the mascarpone and stir.

Cook your pasta then mix it with the sauce, add a little pasta cooking water if necessary.

Finish by adding the chopped basil and parmesan.

    I know this quest to spice up pasta well ! I love the mixture with eggplant, but I never thought of using mascarpone ! As you said above, I reserved it for tiramisu, but I think that will change ! 🙂
