Cette année on a commencé la cueillette un peu plus tardivement que d’habitude mais ça ne nous a pas empêché de faire plusieurs cueillettes en revenant avec plusieurs kilos de cèpes ! Je crois que cette année est une bonne année pour les cèpes et ça tombe bien nous on adore ! Les pâtes aux cèpes c’est vraiment un plat qui comble tout le monde chez nous parce que d’une les enfants adorent les pâtes (ça c’était facile), mais ils les adorent encore plus avec des champignons des bois (oui ils ont bon goût que voulez-vous ?!!!)

Pasta with porcini mushrooms {vegan}

POUR 4 PEOPLE

  • 500 grams of pasta (fresh or not)
  • 4 medium porcini mushrooms
  • 1/4 bunch of parsley
  • 2 cloves of garlic
  • 1 good drizzle of sweet olive oil
  • Salt and pepper
  • Clean the porcini mushrooms using a brush, scrape the feet with a knife. Cut them into strips or pieces.
  • Chop the parsley after removing the stems then reserve.
  • Put the olive oil in a pan, add the crushed garlic cloves then add the porcini mushrooms. Fry over high heat 5 minutes, stirring frequently.
  • Meanwhile cook the pasta as directed on the packet..
  • Season the pan of porcini mushrooms with salt and freshly ground pepper then add the parsley.
  • Simply serve over pasta !

    It’s definitely a seasonal recipe I think., even if on Saturday I went to the Cévennes and I found just 2 petit-vieux-cepes (far from the 10 cm in diameter), 2 sheep's feet, et 2 chanterelles, meager harvest for a month of October! Too thin to make pasta as beautiful as yours and feed the 3 early risers pickers!
