Ricotta ravioli, spinach and nuts

A la maison nous aimons bien les pâtes mais les faire maison est inimaginable pour moi, car je n’ai pas de laminoir et je n’ai pas envie de passer des heures à étaler ma pâte finement ! Alors pour faire de bons raviolis maison, la solution toute trouvée est d’utiliser des pâtes wonton, vous savez les feuilles de pâte à raviolis chinois. Je n’avais pourtant jamais pensé à les utiliser de cette manière avant de faire un atelier de cuisine avec Léa cet été !

- To make the ravioli, put a good teaspoon of filling in the center of the dough, moisten the edges with water then fold the dough in half to form a triangle. Seal the edges well by pressing well then set aside.
- Bring the vegetable broth to a simmer then cook your ravioli 3-4 minutes. Be careful, the water must not boil.
- You can accompany your ravioli with spinach juice, To do this, mix some just blanched spinach with a little truffle or olive oil., season and it's ready !
