Rustic tart with onion compote and black olives from Nyons {sans gluten, vegan}

Aujourd’hui je fais mon coming-out en vous avouant mon amour pour… the onion ! And yes, je suis une grande inconditionnelle de tarte à l’oignon, de compotées et autres dérivés, alors cette petite version de tarte rustique et sans gluten était une évidence !

Une pâte croustillante à la farine de maïs (une farine que j’adore), le fondant des oignons et des olives de Nyons, un tableau parfait pour se régaler.

Rustic tart with onion compote and black olives from Nyons {sans gluten, vegan}

Ingredients

  • 6-7 large yellow onions
  • 15 key of water
  • A dozen black olives from Nyons
  • A drizzle of olive oil
  • A dash of balsamic vinegar
  • 1 c. to s. herbs of Provence
  • Salt and pepper

For the dough

  • 150 g corn flour
  • 50 g brown rice flour
  • 5 c. to s. olive oil
  • 8 key of water
  • 1/2 c. at c. of sel

Description

Prepare the dough by working all the ingredients together by hand or in a food processor. Roll out the dough, prick it with a fork and set aside to cool.

Preheat the oven to 200°.

Slice the onions and brown them over low heat and covered in a pan with a drizzle of olive oil for 10 min. Then add the water and Provence herbs, season and cook 15 more minutes. Once all the water has evaporated, add a dash of balsamic vinegar to the preparation.

Put the onion compote on the dough, leaving 4-5 cm of dough on the edges.

Then add the olives on top, fold the dough and bake 25-30 minutes.

Serve with a good salad (but you already know that !).

    I join the onion fans club – the complete opposite of my grandmother !
    I have never made pie dough with corn flour, which I often use in cakes like this one. Savory tomato cake – corn flour pesto
    I imagine the dough must be quite crumbly, non ?
