Ce petit veggie burger, c’est un peu l’histoire du hasardce jour là j’avais envie d’un burger végétarien, alors je suis partie sur une base de pois-chiches, un peu dans l’esprit des falafel (enfin légèrement différents car les pois-chiches sont cuits !) et puis, il y avait ce bloc de tofu fumé dans le frigo, et hop il a fini dans la préparation du burger. Ajoutez à ça un peu de farine de pois-chiches pour lier le tout et hop, voilà une petite recette vite fait bien fait pour les gourmands ! Ajoutez à cela un bon bun à burger, of guacamole maison et de la roquette : you get a vegan burger that has nothing to be ashamed of compared to meat burgers. Anyway, Monsieur asks me to make it often at home… and I don't refuse, it's so regressive to eat with your fingers !

And then as is the fashion at the moment, you can always keep your chickpea juice to make egg whites !

Ingredients
  1. 4 burger buns
  2. Homemade guacamole
  3. 1 small bouquet of arugula
  4. FOR THE VEGGIE STEAKS
  5. 180 g cooked chickpeas
  6. 140 g smoked tofu
  7. 40 g chickpea flour
  8. Salt and pepper
  9. 1 drizzle of olive oil
Preparation
  1. To make veggie steaks, mash the cooked chickpeas and smoked tofu using a potato masher. Then add the flour then season.
  2. Shape the steaks then cook them in a pan with a drizzle of olive oil 4 minutes on each side.
  3. Heat the buns cut in half in the oven 5 minutes at 200°.
  4. Assemble the burgers starting with the arugula, the steak and finishing with the guacamole.
  5. Taste without delay.

      Thank you Lili ! Yes, chickpea juice rises like egg whites from what I’ve seen, it’s amazing, for the taste I haven't tasted it but apparently it's not too pronounced !

      So you can replace it with sautéed seitan dice for example., and I think you will need less chickpea flour

    Tested and validated ! Just a little too floury for me, but I think it's because I used fresh chickpeas (which I perhaps didn't cook long enough anyway) so my chickpea mixture – tofu was already very “dry”, there was perhaps no need for 40g of flour.. I keep the recipe carefully because the taste is there. !! Thank you for this blog and these very beautiful photos. !
