Veggie burger with chickpeas {vegan}

Ajoutez à cela un bon bun à burger, of guacamole maison et de la roquette : you get a vegan burger that has nothing to be ashamed of compared to meat burgers. Anyway, Monsieur asks me to make it often at home… and I don't refuse, it's so regressive to eat with your fingers !
And then as is the fashion at the moment, you can always keep your chickpea juice to make egg whites !

- 4 burger buns
- Homemade guacamole
- 1 small bouquet of arugula
- FOR THE VEGGIE STEAKS
- 180 g cooked chickpeas
- 140 g smoked tofu
- 40 g chickpea flour
- Salt and pepper
- 1 drizzle of olive oil
- To make veggie steaks, mash the cooked chickpeas and smoked tofu using a potato masher. Then add the flour then season.
- Shape the steaks then cook them in a pan with a drizzle of olive oil 4 minutes on each side.
- Heat the buns cut in half in the oven 5 minutes at 200°.
- Assemble the burgers starting with the arugula, the steak and finishing with the guacamole.
- Taste without delay.

Emilie
18.3.15Thank you Lili ! Yes, chickpea juice rises like egg whites from what I’ve seen, it’s amazing, for the taste I haven't tasted it but apparently it's not too pronounced !

17.3.15Hello ! This looks delicious but my husband is allergic to soy 🙁 What can I replace tofu with? ? Merci
Emilie
18.3.15So you can replace it with sautéed seitan dice for example., and I think you will need less chickpea flour

2.3.16Tested and validated ! Just a little too floury for me, but I think it's because I used fresh chickpeas (which I perhaps didn't cook long enough anyway) so my chickpea mixture – tofu was already very “dry”, there was perhaps no need for 40g of flour.. I keep the recipe carefully because the taste is there. !! Thank you for this blog and these very beautiful photos. !
Emilie
24.3.16Thank you Océane, It’s true that you should limit your chickpeas to overcooking if they are fresh. !
Thanks to you 😉
