Cream Of Mushroom

Le froid est bien là, et oui ma p’tite dame nous sommes bien en hiver, alors pourquoi ne pas se réchauffer au coin de la cheminée (ou du radiateur pour moi !) avec ce merveilleux velouté de champignons ?! And then, comme nous vous proposons depuis quelques jours nos recettes de Noël, ce velouté sera parfait pour une entrée de fête légère et qui change du foie gras !
Bon tout ça pour vous dire (mais je pense que vous le savez déjà) que les champignons et moi c’est une grande histoire d’amour, et comme il y a un super marchand de champignons au marché, the other day I took advantage of it and took some of its varieties to concoct this little soup for you. What's good about this recipe, is that you can use whatever mushrooms you want (or that you find), and it is still perfect with button mushrooms !

After tasting it, I bet you won’t buy mushroom soup in sachets anymore !!!
Cream Of Mushroom {Christmas recipe #6}
Ingredients (pour 6)
- 500 g mixed mushrooms or button mushrooms
- 1 small handful of dried porcini mushrooms
- 75 cl chicken or vegetable broth
- 50 g of mascarpone
- 2 cloves of garlic
- 1 white onion
- 1/4 bunch of parsley
- The juice of half a lemon
- 1 filet d’huile d’olive
- Salt and pepper
Description
Soak the porcini mushrooms in boiling water.
Chop the onion and slice the mushrooms if necessary. Put everything in a casserole dish with a drizzle of olive oil, bring back over high heat and add the previously chopped garlic. Add half of the porcini mushrooms and the soaking water then let cook 15 minutes over medium heat.
Roughly chop the remaining porcini mushrooms and brown them 3 minutes in a pan with a knob of butter. Book.
Then pour the broth over the mushrooms and let cook 20 minutes more on low heat. Season.
Mix everything with the parsley then add the mascarpone and lemon juice.

Serve in bowls with the remaining porcini mushrooms on top. (personally I played death trumpets).
