Il y a des jours comme ça où cuisiner est comme un remède ! Après une mauvaise journée (Murphy quand tu nous tiens), j’avais envie de me faire plaisir et de faire accessoirement plaisir à Monsieur, en nous préparant une gourmandise, j’ai nommé les chouquettes. Les chouquettes c’est un peu ma madeleine de Proust à moi mais aussi à Monsieur car c’est un des premiers souvenirs gustatifs qu’il garde de son enfanceUne gourmandise à la fois fondante et croquante que j’adore, et pourtant je n’en avais jamais fait maison (mais où va t’on ?!) !!!

Et puis aujourd’hui c’est mercredi, so I think all the children will be delighted to have chouquettes for their snack !

In addition, It’s been a long time since I’ve made choux pastry., after my first rather successful attempt with strawberry puffs for the Battle Food !

Ingredients (for around thirty)

  • 110 g of flour
  • 100 grams of milk
  • 100 grams of water
  • 90 g of butter
  • 4 medium eggs
  • 2 pinches of sugar
  • 2 pinches of salt
  • 100 g brown sugar

Description

Prepare the choux pastry by heating the milk, the water, sugar, salt and butter together in a saucepan. When everything is well melted, add the flour all at once and mix with a wooden spoon. Turn the dough in the pan to dry it out for 2 To 3 minutes. Put the dough in a bowl and let it rest 3 minutes.

Preheat the oven to 250° in static heat.

Then add the eggs one by one into the choux pastry., stirring well between each with a wooden spoon. Then pour the batter into a piping bag..

On a baking sheet, make cabbage 3 cm in diameter by holding your piping bag vertically to the plate, cut sharply. Be sure to space them out.

Generously pour the brown sugar over the choux.

Put in and turn off the oven. Let it cook 20 minutes. At the end of 20 minutes turn the oven back on at 180° in static heat and let dry 15 minutes. Do not open the oven door before the end of cooking cabbage !

Take them out of the oven and let them cool..

      I pour the sugar with a spoon then for the sugar which is on the plate, I turn the plate in all directions so that the sugar sticks to the sides of the chouquettes !

    I followed your recipe to the letter but my choux came out of the oven completely flat.… Yet I didn't open the oven door (despite curiosity…) ! An idea of ​​what could have happened ?
    But apart from their appearance of mini-cracked pancakes, they are very good…
