Risotto with dried porcini mushrooms and button mushrooms {To prepare for Christmas #2}

Pour cette deuxième recette, que diriez-vous d’un bon risotto ?! C’est la proposition que je vous fais aujourd’hui car je trouve que le risotto est un plat simple et chic comme je les aime, et parfait pour accompagner une volaille ou à déguster en plat complet pendant les fêtes.

La cueillette des cèpes à été plutôt bonne cette année, alors nous en avons profité pour en faire sécher une partie, afin d’en profiter plus tard dans l’année. If you don't have one on hand, you can find them in any good self-respecting grocery store or replace them with another dried mushroom.

SO, what's better than a good risotto to warm us up and enjoy the end of year celebrations ?!

Risotto with dried porcini mushrooms and button mushrooms

Ingredients (pour 2 in complete plat)

  • 200 g Arborio rice
  • 60 cl of vegetable broth
  • 1 small onion
  • 1 small stalk of celery
  • 7 cl de vin blanc sec
  • 1 nice handful of dried porcini mushrooms
  • 6 mushrooms of Paris
  • 30 g of butter
  • 50 g grated parmesan
  • 1 c. to s. olive oil
  • Salt and pepper

Description

Heat the broth in a saucepan.

In a skillet, heat the olive oil and sauté the finely chopped onion and celery for 10 min over low heat. Add the rice and increase the heat.

Pour in the white wine and dried porcini mushrooms and let boil until completely evaporated and reduce the heat (neither too strong nor too weak).

Add the broth to the rice a ladleful at a time, mix and wait until the rice has absorbed the broth before adding more. Continue adding the broth ladle by ladle and taste the rice frequently, it should be soft and a bit firm (you may not have- be not need all the broth).

Meanwhile, clean the mushrooms and cut them into slices.. Quickly sauté them in a pan with a piece of butter. Season and reserve.

When the risotto is cooked add the mushrooms off the heat, butter and parmesan then adjust the seasoning. Cover the pan and let it rest 1 min.

    Your risotto is so beautiful, It must be really good with the mushrooms. I made a plain one only once and my goodness I should do it again because I had missed cooking the rice a bit. (too crunchy).
