Ces dernières semaines, on a tous bien profité, entre les repas des réveillon et des jours Noël et de l’an, les trop nombreux chocolats et la ou les galette(s) des rois, notre petit estomac fait grise mine (et je ne vous parle même pas des crêpes de la chandeleur et des beignets de mardis gras !!!) ! Brief, quoi de mieux qu’une petite salade de chou avec plein de bonnes choses dedans pour reprendre du poil de la bête et manger sain après les fêtes (oh la super rime !). Vous l’aurez compris, I only put things I like in this coleslaw recipe and I'm sure you'll like these things as much as I do. !

And since I'm sure you haven't had your last pancake and/or you have planned a raclette/tartiflette/fondue for the next few days, this little salad idea is welcome I think !

Cabbage and persimmon salad, Turmeric vinaigrette

Ingredients
  1. 1 red cabbage
  2. 2 persimmons
  3. 1 Red onion
  4. A dozen round radishes
  5. FOR THE DRESSING
  6. 3 tablespoons of olive oil
  7. 1 tablespoon cider vinegar
  8. 1 teaspoon of turmeric powder
  9. 1 pinch of Espelette pepper
Preparation
  1. Finely slice the cabbage and onion and cut thin slices of radish using a mandolin.
  2. Peel and cut the persimmon into half slices.
  3. Mix all the ingredients.
  4. Prepare the vinaigrette by mixing the vinegar,olive oil, turmeric and chilli, emulsify and add to the salad.

    I keep this recipe in the back of my mind, it must be really good ! I haven't yet tasted the persimmon in a salted version.. I love the idea of ​​turmeric vinaigrette !
