Cold zucchini soup with olives and basil

Avec cette (insupportable) chaleur qu’il fait par chez nous, les menus du moment sont exclusivement composés de choses froides comme les salades. Bon, comme ce n’est pas une soupe cru, il a bien fallu faire chauffer la cocotte mais c’est pour la bonne cause car le résultat est vraiment à la hauteur de mes espérances.
Vous pouvez simplement accompagner cette soupe d’une bonne tartine de votre chèvre préféré et là c’est juste le bonheur !

Cold zucchini soup with olives and basil
Ingredients (pour 4-6)
- 1 kg de courgettes
- 100 g pitted green olives
- 1/2 bunch of basil
- 1 clove garlic
- 50 key of water
- 1 filet d’huile d’olive
- noix de muscade
- salt and pepper
Description
Wash and cut the zucchini into cubes then heat a drizzle of olive oil in a casserole dish. Add the zucchini and the crushed garlic clove. bring back 3 min over high heat, stirring frequently.
Pour the water, lower the heat and let it cook 15 minutes. Once cooked, let the preparation cool.
Mix the soup with the olives and basil then season with a little freshly grated nutmeg, salt and pepper.

Enjoy fresh.
