Asparagus tart {without milk}
Nous sommes en été depuis peu (bon je sais je ne vous apprends rien, sauf si vous venez de sortir d’une grotte dans laquelle vous étiez depuis 3 ans !), mais la saison des asperges n’est pas encore terminée. Nous étions en week-end à Briançon et sur le marché il y a beaucoup de marchands italiens qui vendent déjà tomates, aubergines et courgettes, mais il y avait aussi une petite botte d’asperges qui m’a fait envie. Bon j’ai aussi craqué sur des courgettes et des fleurs de courgettes magnifiques (upcoming recipes !) mais ça n’est pas le sujet ! Finally here are the almost last asparagus of the season ended up in a pie, something i had never done (you notice the risk taking !), and it's really a great discovery.

Asparagus tart {without milk}
Ingredients (pour 1 tarte)
- 300 g green asparagus
- 3 eggs
- 20 tbsp oat cream
- 10 tbsp oat milk
- Salt and pepper 5 berries
For the dough
- 200 g of flour
- 5 cl d’huile d’olive
- 1 egg
- 1 pinch of salt
Description
Peel the asparagus and blanch them 5 minutes in salted boiling water. Drain and let cool.
Preheat the oven to 180°.
Make the dough by putting the flour in a bowl, make a well and add the salt, egg and olive oil. Knead until you get a smooth dough (add 1 tablespoon cold water if needed). Roll out the dough on 4 mm thick and darken it in a rectangular pie mold and prick it.
Arrange the asparagus in two layers on the dough
Beat the eggs in an omelette with salt and pepper then add the cream and the oat milk. Pour the mixture over the asparagus.
Bake 25-30 minutes.
Enjoy with a nice salad.
