Zucchini tart, ricotta and mint

Il ne faut parfois pas grand chose pour faire un bon repas et se régaler comme cette tarte aux courgettes, ricotta et menthe qui sonne comme un dimanche midi de retour de marché. Car c’est exactement ça cette tarte, de jolies courgette trouvées sur le marché de l’Estacade du côté des petits producteurs, un bouquet de menthe et de la bonne ricotta fraîche de chez l’italien. For the base, une bonne pâte feuilletée pas faite maison et le tour est joué !


C’est simple et c’est que du bonheur !!!
Zucchini tart, ricotta and mint
Ingredients (for a pie)
- 2 small zucchini
- 1 puff pastry
- 200 g the ricotta
- 1 small bouquet of fresh mint
- 1 pinch of Espelette pepper
- 1 filet d’huile d’olive
- Salt and pepper
Description
Preheat the oven to 200° on the bottom.
Roll out the puff pastry dough into a rectangle then pierce holes using a fork.
Wash then chop the mint.
In a salad bowl, mix together the ricotta, chopped mint, Espelette pepper, a drizzle of olive oil then season with salt and pepper.
Spread this mixture on the puff pastry leaving a centimeter on the edges.
Finely cut your zucchini into slices then spread them nicely on the tart. Finally add a drizzle of olive oil.
Bake 15-18 minutes

Enjoy hot with a good summer salad.
