Candied tomatoes in the oven

Starting tomorrow I'm offering you a recipe to accompany them so that they feel less alone !

SO, all with tomatoes !

Tomates confites au four

Candied tomatoes in the oven

Ingredients (pour 2 jars)

  • 1 kg of tomatoes of different varieties (the round one will be juicier and the long “Andes retort” type will be drier)
  • Fresh thyme
  • Olive oil
  • Salt and pepper

Description

Preheat the oven to 110°.

Wash and cut your tomatoes into quarters and place them on a baking tray covered with parchment paper.

Salt, pepper and sprinkle with thyme (or other herbs according to your taste). Drizzle some olive oil over the tomatoes.

Bake for 2h30 – 3 hours.

It's that simple !

Let cool and keep refrigerated 10 days or longer in jars and covered with olive oil.

Nothing better than making your own dried tomatoes, I've been wanting to try for a while but find that my tomatoes aren't good enough.
