Candied tomatoes in the oven

Rien de tel que le fait maison, alors aujourd’hui je vous propose un truc tout simple mais vraiment trop bon, faire vos propres tomates confites au four.
Personnellement j’adore ça et je profite de la fin des beans tomates pour en faire pas mal et les conserver en pots, cool, pour pouvoir encore en déguster quand la saison des tomates sera terminée.
Oui oui car les tomates confites sont parfaites sur : des tartines avec du fromage de chèvre et de la roquette, and risotto, un plat de pâtes, dans des salades de pâte, de riz ou de vegetables ou bien juste comme ça, en apéritif, for gluttony ! Starting tomorrow I'm offering you a recipe to accompany them so that they feel less alone !
SO, all with tomatoes !

Candied tomatoes in the oven
Ingredients (pour 2 jars)
- 1 kg of tomatoes of different varieties (the round one will be juicier and the long “Andes retort” type will be drier)
- Fresh thyme
- Olive oil
- Salt and pepper
Description
Preheat the oven to 110°.
Wash and cut your tomatoes into quarters and place them on a baking tray covered with parchment paper.
Salt, pepper and sprinkle with thyme (or other herbs according to your taste). Drizzle some olive oil over the tomatoes.
Bake for 2h30 – 3 hours.
It's that simple !

Let cool and keep refrigerated 10 days or longer in jars and covered with olive oil. Pouvez aussi les congeler et les conserver ainsi plus longtemps.
