S’il y a bien un basique dont nous ne nous sommes jamais lassé cet été, c’est bien la tarte fine tomate car on peux la réinventer à l’infini. Sur une base de moutarde, d’oignons confits ou de chèvre frais comme ici c’est la tarte fine parfaite pour un repas improvisé ou sur le pouce car cette tarte ne demande que 4 ingredients : Une pâte feuilletée, du chèvre frais (au lait cru c’est mieux !), des tomates anciennes et du basilic. Nothing too complicated, but I couldn't miss this recipe that followed us all summer on lazy evenings or during our improvised picnics.…. oh summer ! In short, the holidays are over but not the tomato season so take advantage of it and treat yourself !

You're going to tell me don't the dough get soggy ? Well the little trick is to cook the thin pie by the sole and finely cut the tomatoes so that this does not happen !

Ingredients
  1. 1 puff pastry
  2. 2 large heirloom tomatoes
  3. 200 g of fresh goat cheese
  4. A few basil leaves
  5. A drizzle of olive oil
  6. Salt and pepper
Preparation
  1. Preheat the oven to 210° on the sole.
  2. Place the dough on a baking sheet.
  3. Spread the fresh goat cheese on the dough then add the tomatoes cut into thin slices.
  4. Salt, pepper and add a small drizzle of olive oil.
  5. Bake 20-25 minutes then serve with chopped basil on top.

    Bonjour , I really want to make this Tomato Goat Pie but … I'm on a small Greek island (long live the holidays) where I won't find puff pastry . What do you recommend as a paste? ? I can make a shortbread with olive oil ?
