Carrot cake à la patate douce et aux noix

En me lançant dans cette recette j’avais comme idée de transformer un peu le carrot cake et de lui apporter de la douceur grâce à la patate douce. Je me suis donc lancer dans du bidouillage de l’art culinaire en mixant plusieurs recette.

Pour cette recette, j’ai longtemps cherché de la patate douce à chair blanche (oui oui on se reconnait toutes et tous là, à chercher un truc pendant des semaines parce qu’il nous le faut absolument !), que je trouve plus sucrée que celle à chair orange mais si vous n’en trouvez pas ça n’est pas grave !

N’ayant pas de noix de pécan sous la main est étant un peu a lot chauvine, I decided to use good Grenoble organic nuts (that I broke with my little arms) And I am not disappointed !

By taking my photos I tasted the first bite and I pushed a hummm… So it was good ! A humid and melting texture, The crisp nuts and to perfect the whole frosting with the cream cheese… perfect !

Carrot cake with sweet potato and walnuts

Ingredients

  • 700 g of sweet and crushed sweet potato flesh (environ 3 Sweet medium -sized potatoes)
  • 300 g of flour
  • 150 g cane sugar
  • 4 eggs
  • 18 cl of grapeseed oil
  • 100 g grated carrots
  • 75 grams of walnuts (Grenoble !) peeler + A little more for the decor
  • 2 c. at c. bicarbonate of soude
  • 1/2 teaspoon vanilla powder
  • 1/2 c. at c. cinnamon

For the icing

  • 250 g de cream cheese
  • 220 g icing sugar
  • 90 g soft butter
  • 1/2 c. at c. vanilla powder

Description

Preheat the oven to 180°.

In a salad bowl, mix the flour together, sugar, le bicarbonate, Cinnamon and vanilla.

In another container, Beat the eggs with the oil. Add this mixture to the dry ingredients and mix. Then add the sweet potato puree, carrots and walnuts then mix.

Pour everything into a baking mold (buttered and floured if necessary).

Bake 50 min.

Meanwhile prepare the icing. To do this, mix all the ingredients together until you obtain a very smooth texture.. Book cool.

Once the carrot cake is cooked, unmold it and let it cool to room temperature.

Once cooled, add the icing on top and sprinkle with nuts.

Let the carrot cake rest 1 chill for an hour before serving (a little patience, foodies).
