Le temps des galettes des reines et des rois est arrivée depuis quelques jours, l’heure pour moi de vous proposer ma version ! Cette année j’ai eu envie d’amener une touche originale avec une galette des rois au miso, si vous ne connaissez pas le miso, il s’agit d’une pâte fermentée de céréales ou légumineuses issue de la cuisine japonaise. Le miso blanc apporte une touche umami et salée qui se marie à merveille avec l’amande, bref une vraie découverte, le miso en dessert c’est de la bombe !!!

La galette maison c’est quand même le game au dessus,

King cake with miso {vegan}

POUR 6 PEOPLE

Homemade king cake
  • 1 great reduction in vegan puff pastry
  • 70 grams of sugar
  • 120 g of white almond powder
  • 120 g vegetable margarine 80% de MG
  • 2 tablespoons of white miso
  • 1 tablespoon of apple puree
  • 4 level tablespoons of cornstarch
  • 2 tablespoons of sweetened soy milk
  • 2 tablespoons of maple syrup
  • Beat the margarine until you obtain a creamy texture.. Then add the almond powder and sugar to form a smooth and homogeneous mixture..
  • Add the miso, apple puree and starch then mix.
  • Put the mixture in a piping bag and set aside to cool..
  • Preheat the oven to 180°.
  • Cut out two circles of 26 cm in puff pastry.
  • Add the almond cream forming a snail and stop at 3 cm you board. Add the beans.
  • Wet them with water 3 cm edge and place the second circle of dough on top. Gently run the flat of your hand around the edges without crushing the dough.
  • Book cool 1 hour.
  • Turn the pancake over on a sheet of parchment paper (the top will end up below) and place on a plate.
  • Brush the pancake with the sweetened soy milk.
  • Then decorate the top of the pancake with the blade of a knife.
  • Put in the oven for about 35-40 min so that the pancake is nicely browned.
  • Brush with maple syrup straight out of the oven to obtain a shiny pancake like the pastry chef's..
