Brioche des rois without butter

Le marathon des reines et des rois n’est pas terminé (far from there, on a jusqu’à fin janvier), alors après the wafer voici venir la brioche des rois. La brioche sans beurre est un classique chez nous, 7 ans que Mini-Mademoiselle (qui n’est plus si mini !) est allergique aux protéines de lait, ici on est calé avec le sujet !
La Brioche des rois c’est fluffy, c’est doux et ça se mange avec tout,

Brioche des rois without butter
POUR 8-10 PARTS
- 600 g of flour T65
- 250 g vegetable margarine 80% de MG
- 25 cl of soy milk
- 1/2 fresh yeast cube
- 60 grams of sugar
- 1 pinch of salt
- 1 pinch of vanilla powder
- Brown sugar
- Sweet soy milk
- Beans
- Put the yeast with the warmed milk in a container and let it rest 10 min.
- put the flour in a bowl, make a well and add the yeast to the center. Work the dough between your fingers or in a robot fitted with a hook and incorporate the sugar, vanilla and salt.
- Then add the margarine in pieces.
- Knead the dough approximately 10 minutes, until it comes off the salad bowl.
- Let the dough rise covered under a tea towel for 2 hours.
- Punch down the dough then form a ball. Make a hole in the center with your fingers then enlarge it.
- Place the crown on a baking tray, add the beans and an oiled circle or bowl in the center of the brioche.
- let rise 30-45 minutes.
- Brown the surface of the brioche with sweetened soy milk and add the brown sugar.
- Preheat the oven to 200°.
- Bake 15 minutes then lower the oven to 180° and continue cooking 25 minutes.
- Leave to cool on a rack and enjoy.
