Les dernières cueillettes de tomates sont là et comme j’en ai encore une petite quantité en stock, j’ai voulu tester la tatin de tomates à ma façon. Monsieur et moi avons adoré cette tarte tatin de tomates et c’était pour moi une grande première. La pâte sans gluten à la farine de pois-chiches et au pavot se marie parfaitement à l’acidité des tomates, que dire à part que c’est bon ?!!!

I wanted to make a gluten-free dough made from chickpea flour and rice with a lot a lot poppy seeds for a change, I hope that pleases you !

Heirloom tomato tatin, chickpea and poppy seed paste {sans gluten}

Ingredients

  • 6-7 tomatoes of different varieties
  • 30 g of butter
  • A drizzle of balsamic vinegar
  • 20 g cane sugar
  • Flower of salt
  • Pepper

For the dough

  • 120 g brown rice flour
  • 80 g chickpea flour
  • 40 g poppy seeds
  • 5 c. to s. olive oil
  • 8 key of water
  • 1/2 c. at c. of sel

Description

Prepare the dough by working all the ingredients together by hand or in a food processor. Roll out the dough and set aside.

Preheat the oven to 200°.

Cut the tomatoes in half, seed them.

Melt the butter and sugar in a pan, add the tomatoes cut side up. Sauté the tomatoes 5 min then add a drizzle of balsamic vinegar. Let it cook again 5 minutes.

Arrange the tomatoes cut side up in a pie dish then add the caramel formed in the pan. Season the tomatoes with fleur de sel and pepper then place the dough already spread on top. Take care to fold the excess dough well towards the inside of the dish.

Bake 30-35 min.

    Too late for tomatoes. But your dough will probably go very well with some more wintery vegetables.. Car, even without gluten problem, she looks too tasty to leave out.

      Chickpea flour is a little special and strong in taste that's why I mix it with rice flour, you can find it in organic stores !
