On est en plein dans la saison des fraises, c’est donc le moment d’en profiter à fond ! Le week-end dernier nous étions justement à la cueillette des fraises, rituel que nous prenons plaisir à répéter chaque année, bon même si cette année c’était sous l’orage !!! Bref nous sommes revenus avec nos 10kg habituels qui ont fini en confitures, compotes et gâteaux, dont cette génoise aux fraises et chantilly. Oui parce que clairement les choses les plus simples sont les meilleures et ça, ça vaut clairement pour les fraises. Les fraises et la chantilly c’est un vrai bonheur, then associated with the softness of a gluten-free sponge cake, it's the perfection (oui, oui, just that !!!).

yes because clearly who does not like strawberries, iM asking you ?! As usual you can change things slightly, especially if you do not want to make a gluten-free sponge cake, simply replace rice flour and starch with the same amount of wheat flour. And if you don't have flowers, nevermind, you can also replace them with a little fresh mint or dill !

Sponge cake with strawberries and whipped cream {without milk – sans gluten}

POUR 4-6 PEOPLE

  • 2 eggs
  • 65 grams of sugar
  • 30 g rice flour
  • 20 g cornstarch
  • 15 g tapioca starch
  • 22 g of margarine
  • 1 pinch of vanilla powder
  • 30 cl of vegetable whipped cream +2 tablespoons of icing sugar
  • Strawberries (about 200g)
  • edible flowers (optional)
  • Start by making the gluten-free sponge cake, for this, whip the whole eggs in a mixer, vanilla and sugar for 5 minutes, until the mixture is tripled in volume and frothy.
  • Melt the margarine and let cool.
  • Then add the flour and starch to the spatula.
  • Take a good tablespoon of the preparation then add the melted and cooled margarine.
  • Gently add this preparation to the rest of the dough.
  • Bake 20 minutes at 180°.
  • Unmold and let cool on a wire rack.
  • Whip the whipped cream with the icing sugar then pipe it on the sponge cake.
  • Then add the cut strawberries and flowers to decorate.
  • Taste without delay.
