Mushrooms At The Greek

Des minis champignons m’ont fait de l’œil au marché et je n’ai pas pu leur résister ! Je me souvenais que dans ma jeunesse (oulala c’est loin !) j’adorais les champignons à la grecque mais je ne les ai jamais cuisinés.
Vous allez peut-être me dire, c’est pas un peu kitch comme recette les champignons à la grecque ???!!! Mais non, But no… c’est juste un peu passé de mode (années 90′) mais c’est bon, so why deprive yourself of it ?!

J’espère just faire changer d’avis les (plus) récalcitrantes (ou récalcitrants d’ailleurs) d’entre vous !!!
Et puis c’est la bonne saison pour en manger, we need a little freshness and flavor on our plates…
Mushrooms At The Greek
Ingredients (pour 4-6)
- 500 g of mini button mushrooms
- 25 cl de vin blanc sec
- 1 large tablespoon of tomato paste
- The juice of half a lemon
- 1 onion
- 1 c. at c. coriander seeds
- 1 bouquet garni (thyme, laurier, rosemary…)
- 1 pinch of sugar
- 1 filet d’huile d’olive
- Salt and pepper

Description
Peel and chop the onion into small cubes. Heat a drizzle of olive oil in a saucepan and brown the onion cubes 5 min on low heat.
Wash the mushrooms and add them to the onion.
Turn up the heat, pour in the white wine and let reduce 3 min.
Then add the tomato paste, the bouquet garni, lemon juice, coriander seeds and sugar then simmer over medium heat for 15 min environ. The juice must have really reduced to make a syrupy sauce..

Season to taste and let cool before consuming.
