Ça y est c’est l’épiphanie, alors même si déjà pas mal d’entre nous ont déjà craqué pour une part de galette ce week-end, c’est aujourd’hui le « vrai » jour (et comme la galette c’est bon je suis sûre qu’on en mangera encore tout le mois de janvier !). Brief, cette année je vous ai concocté une galette des rois chocolatamandes parfaite pour les gourmands qui n’ont pas eu assez de chocolat pendant les fêtes ! Cette recette est sans lait (à base de margarine végétale) mais vous trouverez aussi des versions pur beurre à la crème d’amande et au Grand Marnier from previous years. Like every year, I didn't make my puff pastry because firstly I'm a little lazy and secondly it's a bit of the kind of dough that scares me, but one day will come…

So this year we're taking a good chocolate bath and it doesn't hurt ! SO, who will be the queen this year ?!

Chocolate king cake - almonds {without milk}

Ingredients
  1. 150 g dark chocolate
  2. 12 cl of coconut cream
  3. 155 g of almond powder
  4. 155 g vegetable margarine
  5. 80 g cane sugar
  6. 3 eggs + 1 egg (gilding)
  7. Bitter almond aroma
  8. 2 vegetable puff pastry
  9. 1 or 2 beans
Preparation
  1. Start by preparing the ganache by heating the coconut cream then pour it over the chocolate pieces. Emulsify well, put in a piping bag and set aside to cool.
  2. For the almond cream, mix together the almond powder, sugar and margarine to form a smooth and homogeneous mixture. Add the eggs then mix again and add a few drops of bitter almond. Put the mixture in a piping bag.
  3. Preheat the oven to 180°.
  4. Spread the first puff pastry on a baking sheet.
  5. Add the chocolate ganache, forming a snail and stopping at 3 cm from the edge of the dough.
  6. Do the same with the almond cream on top of the ganache and add the beans.
  7. Wet them with water 3 cm edge and place the second roll of dough on top. Use pressure to seal the edges of the dough well..
  8. Brown the pancake with the whole beaten egg then decorate the edges and top with the back of a knife.
  9. Bake approx. 30 min so that the pancake is nicely browned.

    quick question from a non-vegetarian : vegetable puff pastry is made only with margarine, i guess ?
    She is very beautiful : successful decoration on the top 😉

      So in fact everywhere because classic puff pastry does not contain eggs ! You just need to find puff pastry that is not pure butter and that's it., so much herta, only private labels only in organic grocery stores !!!

      From everywhere for vegetable puff pastry because all those which are not pure butter are (herta, distributor brand, bio…)
