La rentrée c’est un peu difficile pour tout le monde, qu’on soit petit ou grand, et après une bonne semaine de reprise on se dit qu’on retournerait bien en vacances ! Comme ça n’est pas forcément possible car au choix : vous n’avez plus de congés, vous avez école ou vous avez déjà flambé la totalité du budget vacanceset bien moi j’ai la solution à tous vos problèmes (enfin presque !) avec ce gâteau moelleux à souhait, un vrai goûter doudou ! Ce gâteau au lait de coco est une vraie invitation au voyage et qui dit voyage dit vacances (banco !). Coconut milk, you will have understood, but also green tea which takes us straight to Asia (yes I have the right to mix Thailand and Japan if I want !), a cake to serve “of course” with the tea of ​​your choice !

Gâteau au lait de coco recette

Coconut milk cake, green tea and vine peach {without milk}

Ingredients
  1. 280 g of flour T65
  2. 100 g cornstarch
  3. 6 eggs
  4. 240 g coconut milk
  5. 100 g cane sugar
  6. 1 baking powder
  7. 2 tablespoons of coconut oil
  8. 2 teaspoons of powdered green tea
  9. 2 vine peaches
  10. Icing sugar
Preparation
  1. Preheat the oven to 180°.
  2. Separate the whites from the egg yolks then beat the yolks with the sugar until the mixture turns white. Then add the milk and coconut oil to the mixture.
  3. Pour the flour, starch, green tea powder and yeast on the previous mixture and mix.
  4. Beat the egg whites until stiff then gently add to the mixture..
  5. Pour the dough into a non-stick mold.
  6. Cut the vine peaches into quarters then place them on the dough.
  7. Bake 35 minutes.
