Fluffy Plum Upside-Down Cake

Ce jour-là, avec Monsieur, nous étions en montagne en promenade autour du lac de Monteynard quand nous sommes tombés sur des pruniers sauvages.  Nous avons donc cueillis ces petites prunes rouges très acidulées.

De retour à la maison, j’ai eu envie de tester un gâteau renversé avec une base de biscuit à l’amande pour s’allier complètement avec les prunes.

Le résultat est parfait entre le fondant du biscuit et l’acidité de la prune mais Monsieur à quand même trouver ça un peu « fizz » comme il dit, then you can add a little sugar on your plums before pouring the biscuit mixture.

Fluffy Plum Upside-Down Cake

Ingredients

  • 500 g for prunes
  • 180 g softened butter
  • 160 g cane sugar
  • 4 eggs
  • 130 g whole almond powder + 25 g
  • 100 g of flour
  • 1 packet of vanilla sugar
  • 2 c. at c. yeast

Description

Preheat the oven to 170°.

Line a rectangular pan with parchment paper or use a non-stick pan.

Wash and pit the plums then arrange them at the bottom of the mold. Sprinkle with 25 g ground almonds and a little sugar if desired.

Mix the butter with the sugars until you obtain a creamy and airy mixture. Add the eggs one by one and work the mixture well between each egg.

Then add the yeast, flour and almond powder and mix with a spoon.

Pour the mixture over the plums and bake 50 min.

Unmold once the cake has cooled and enjoy !
