Liège sourdough waffle {without milk}
Ça y est je me suis enfin lancé dans l’aventure du levain. Et ça c’est grâce à une amie qui m’a donné une partie du sien et j’espère lui faire honneur, car son levain elle le pouponne depuis 2004 ! Alors c’est parti pour l’aventure levain et je peux vous dire que les débuts n’ont pas été simples avec Martin (oui c’est son petit nom !). Mais maintenant que je commence à l’apprivoiser, je lui fait faire pas mal de choses, et là ce sont des gaufres de Liège. Cela faisait une éternité (oui au moins tout ça !) that I had not made Liège waffles, and Martin le levain revived me in the adventure. This version is without milk and with wholemeal flour, healthier but just as tasty as the original recipe that I suggested to you quite some time ago.
Perfect for Wednesday afternoon tea (that's good it's today !), children and adults will devour them. SO, Who are good sourdough waffles for? ?!
- 375 g whole wheat flour
- 150 g vegetable margarine
- 150 g sourdough
- 2 eggs
- 50 g cane sugar
- 1 pinch of salt
- 120 g brown sugar
- Put the flour in a bowl, make a well and add the leaven in the center. Work the dough between your fingers and incorporate the eggs, sugar and salt. Knead the dough in a food processor or by hand then add the margarine. Knead the dough until it comes away from the bowl (you can transfer it to the worktop for more convenience). Finally add the brown sugar.
- Let the dough rise covered under a tea towel for 2 hours.
- Degas the dough with the point without working it then reserve.
- Preheat the waffle maker, then place dough pieces on the plates and cook for about 4 minutes (the time will depend on your device).

11.10.15Tried… approved ! I was transported to the streets of Brussels, in front of one of those vans that sell Liège waffles ! 2 adjustments for me : T80 flour and butter instead of margarine.
