Ah les gnocchis… Des gnocchi de pommes de terre oui mais des gnocchi incroyablement légers. Oui, oui, c’est vrai qu’ils sont frits mais ça leur procure cette légèreté incomparable (il faut goûter pour y croire) ! Cette recette me viens de ma grand-mère et je l’adore, Monsieur m’en réclame tout le temps !!!

Fried potato gnocchi

Ingredients (pour 4)

  • 4 grosses pommes de terre
  • 3 c. to s. bombées de farine + 4 c. to s. pour le plan de travail
  • 2 eggs
  • Du sel et poivre
  • De l’huile d’olive ou de l’huile de tournesol

Description

Faites cuire les pommes de terre en robe des champs puis épluchez-les.

Purée them in a bowl and add the eggs one by one as well as the flour to obtain a smooth and not too wet consistency. Season the preparation.

Sprinkle your work surface with flour. With your hands take preparation, roll it in flour and form a sausage. Repeat the process until the preparation is used up. Cut the sausages into small sections and let dry 10 min.

Heat olive oil in a pan, enough to fry the gnocchi. If you have a fryer, you can also use it. Fry the gnocchi 3 min so that they are golden brown and remove them.

Serve as is with fleur de sel and accompanied by a good big salad !
