Le beurre de coco, it tells you ?! J’ai découvert le beurre de coco grâce à Deep et son article qui vous détaille les étapes pour réaliser cette petite merveille, allez voir c’est fascinant.

J’ai depuis, toujours un pot de beurre de coco dans mon frigo et je l’agrémente au gré de mes envies, et là l’envie c’était des madeleines. I know, je sais, je suis dans ma période madeleines car il n’y a pas si longtemps que ça je partageais avec vous la recette des madeleines au cœur de crème de marrons. En même temps c’est bon et je suis une fille faibleque voulez-vous ?!

These are currently my favorite madeleines, soft as can be and with a good coconut taste…hmmmm !

Coconut butter madeleines

Ingredients (for about fifteen)

  • 60 g of coconut beurre
  • 55 g of flour
  • 60 g cane sugar
  • 2 eggs
  • 1 c. at c. coconut powder

Description

Beat the eggs with the sugar to obtain a frothy mixture, add the coconut butter in liquid state, flour and coconut, incorporate intimately. Reserve the dough in the fridge 15-20 minutes.

Preheat the oven to 210°.

Put the dough in the madeleine molds until three quarters full.

Bake 12 minutes.

      Either you have the Mély recipe which I give in the link in the article, or you can actually find it in organic grocery stores.

      I keep it cool or at room temperature and Mély says it can be stored 1 an !!! But it doesn't last that long !!!

    Very good recipe tested and approved this weekend. However, I didn't have at all the same result as you with the "beautiful bump" typical of the madeleine. What advice do you give me to make them rise a little more? ? Thanks in advance !

      Thank you yelyx for this feedback, did you refrigerate the dough between each batch? ? Or maybe the egg-sugar mixture wasn't beaten enough, otherwise I don't see !

        For the first batch, the dough came out of the fridge. My coconut butter being solid, done the same morning, I put it in the microwave for a few seconds to liquefy it.. I followed the recipe to mix the ingredients… Okay, I'll try again to see… Anyway, even a little flat, they haven't been long, swallowed before they even cool !!

    Oh dear, you can't know how you're tempting me ! Especially since I bought coconut to make the famous coconut butter… I too am in the middle of the madeleines period… and I think I'm going to do it again tomorrow…
