C’est reparti pour la 28ème édition de la Battle Food, cette fois-ci menée par Hanane du joli blog Safran Gourmand. Le thème du mois étant la Saint-Valentin, je n’ai pas hésité à jouer la carte romantique gnangan  pour vous proposer des marshmallows. Oui, mais comme je suis une fifille, j’ai fais des petits cœurs que j’ai teintée de différentes couleurs (oh je fais des rimes en plus aujourd’hui !). Anyway, rien de bien compliqué dans la recette de la guimauve sauf qu’il vous faudra absolument un thermomètre de cuisine et si possible un robot pâtissier (ou alors d’autres petites mains). But you will be so proud to have made your homemade marshmallow, that it's worth stretching out a little. Bon, what I am not admitting to you here, I missed my marshmallow the first time because I forgot to slowly pour the sugar syrup… but hey I made up for it eh ?!

And then, what could be better than a pretty little homemade gourmet gift to say I love you… (for singles it is not forbidden to say I love you !).

Marshmallows - homemade marshmallow
For around twenty heart marshmallows

Ingredients
  1. 2 egg whites
  2. 165 g caster sugar
  3. 60 g of water
  4. 10 g of gelatin (5 leaves)
  5. 8 g of glucose or honey
  6. A few drops of lemon juice
  7. Icing sugar
  8. Dyes
Preparation
  1. Soften the gelatin in cold water, drain and reserve
  2. Heat in a saucepan, sugar, water and glucose, mix. The syrup should reach 125-130°.
  3. Meanwhile, beat the egg whites with the lemon juice until they become frothy..
  4. Add the gelatin once the temperature is reached, mix well and carefully pour the syrup over the whites while continuing to beat at medium speed. Beat the mixture until lukewarm.
  5. Pour the marshmallow over 1 cm in a dish covered with cling film or lightly oiled. Book 1 cool hour.
  6. Sprinkle a work surface with icing sugar then unmold your marshmallow on top. Sprinkle with icing sugar again on the other side.
  7. Cut out hearts using a cookie cutter.
  8. Dilute the colorings in ramekins then quickly dip your marshmallows in them, drain well then let them dry 1 hour on a tray.
  9. All you have to do is taste them.

    I would tend to specify, than when adding the gelatin, you have to be delicate ! Because it generally foams a lot !!

    Well, I'm stupid like that … I like !!
    I bought at least ago 3 years a thermometer to make marshmallows precisely… It’s new 😉 So, thanks to you, This makes me want to get started.
    First of all, thank you for specifying to slowly pour the sugar syrup. I wouldn't have thought of it and it would have caused me the same inconvenience as your first experience. !
    Not being able to provide myself with glucose syrup, Is the result the same if we use honey provided as a replacement in the list of ingredients? ? The quantity indicated is not very important, I don't think the taste is too strong. Have you already tried with fairly neutral “all flower” honey? ?

      Oh cool ! It’s true that we make purchases like that sometimes that we forget in the back of a cupboard ! The result is in any case perfect with honey because that’s how I made them !!!
