Ok, deux recettes de meringues en moins de deux semaines, j’ai un peu craqué là !!! Mais que voulez-vous, on dit bien quand on aime, on ne compte pas, non ?! Et puis la meringue j’adore ça, bon je dois vous avouer que cette recette date un peu, bah ouais les cerises en plein mois de janvier ça court pas les rues (oui je ne vous apprends rien là), et cette recette, et bien, je l’avais un peu oubliée à vrai dire ! Bon pas grave, car si vous n’attendez pas l’été prochain pour faire cette ptite recette, vous pourrez troquer la compotée de cerises par une compotée pomme-poire ou alors une compotée pomme-agrumes (yes I know that's a lot of apples, but at the moment the apples, unlike cherries, well it runs the streets !!!). Anyway, it’s you who sees my little lady/my good sir, do as you wish, I'm sure the result will be perfect !

Come on, I leave you after so much procrastination and futility, because me, I might just make some meringue again !

Meringue with cream and fruit compote
Pour 6 meringues

Ingredients
  1. 4 egg whites
  2. 120 g caster sugar
  3. 120 g icing sugar
  4. A few drops of lemon juice (for a white meringue)
  5. 1 pot of whole crème fraîche
  6. 400 g of fruit of your choice (here raspberries and cherries)
  7. 20 grams of sugar
  8. 1/2 vanilla pod
Preparation
  1. Preheat the oven to 90°.
  2. Beat the egg whites until stiff, then add the lemon and caster sugar while continuing to beat. 30 seconds. stop beating 10 seconds then repeat 10 seconds.
  3. Add the sifted icing sugar with a spatula to the egg whites.
  4. Put the meringue in a piping bag.
  5. Pipe your meringues by forming 6 big balls, on a baking tray covered with baking paper.
  6. Leave to dry in the oven for 2 hours.
  7. Once cooked, prepare the fruit compote, to do this, put your fruit in pieces in a saucepan, add the sugar and /2 vanilla pod split in two and cook covered and over low heat 20 minutes.
  8. Once the meringues and compote have cooled, add a tablespoon of cream and a tablespoon of compote per meringue and enjoy !
