Eggplant millefeuille graffiti, red onion and feta
Un millefeuille violet ça vous tente ?! De belles aubergines graffitis m’ont tenté sur le marché, elles sont tellement mignonnes, que j’ai craqué ! Et quoi de mieux qu’une recette avec des notes du Sud pour nous remonter le moral en cette rentrée !
La recette est pour quatre millefeuilles à déguster à 4 en entrée mais vous pouvez augmenter un peu les doses pour le servir comme plat, vous allez voir, c’est vraiment simple.
Eggplant millefeuille graffiti, red onion and feta
Ingredients (pour 4)
- 2-3 aubergines graffitis (selon la taille)
- 2 oignons rouges
- 200 g of feta
- 1 gousse d’ail violet
- 1 filet d’huile d’olive
- 1 c. to s. de paprikas de Hongrie
- 1 c. to s. cumin powder
- 1 c. to s. cumin seeds
- Salt and pepper
Description
Preheat the oven to 200°.
cut out 16 fines tranches d’aubergine (they should all have roughly the same diameter) and keep the leftover cuts for another recipe.
Arrange the eggplant slices on a baking sheet, drizzle with olive oil and fry 10 minutes.
During this time, Peel the red onions and cut into fairly thin slices.
In a bowl, mash the feta with the spices then add the crushed garlic clove. Finish with a drizzle of olive oil, then season.
On a baking sheet, make your millefeuilles starting with a slice of eggplant then a slice of red onion and finally a little feta mixture. Make three layers and finish with a slice of eggplant topped with a little feta mixture.
Bake 10 min.
Serve warm as an appetizer or, completed with a good salad to make a dish but do not make a whole dish anyway (she was easy that one !!!) !
