Cela fait un petit moment que je fais des tests en cuisine pour trouver la recette de muffins tout chocolat sans gluten et vegan parfaite. Bon après moultes essais pas tous réussis je dois l’dire, le résultat est enfin là et ils sont moelleux et fondants à souhait et bien sûr plein de chocolat (on a dit muffins tout chocolat, oui ou bien ?!). For the chocolate, et au vue du nombre de test effectués pour trouver la recette parfaite, j’ai acheté un sac de trois kilos de chocolats en pistoles et note à moi même ne jamais acheter les pistoles par trois kilos car cela est bien trop facile d’aller en piquer de temps en temps une (or more) dans le paquet (and my hips say thank you)! Bon, don't worry, I still had enough left for the recipe and for others to come because let's conclude that chocolate is so good !

Brief, let's return to our sheep muffins to say that this recipe is just super simple, no complicated ingredients in sight and only good things so you have no excuses not to try them, yes because to try them is to adopt them !

Ingredients
  1. 200 g of gluten healthy flours (100 g of whole rice, 50 g too much, 25 g of buckwheat, 25 g chickpeas)
  2. 50 grams of starch
  3. 200 g dark chocolate
  4. 110 g vegetable margarine
  5. 100 g chocolate chips
  6. 1 baking powder
  7. 80 grams of sugar
  8. 20 cl vegetable milk
  9. 4 tablespoons of applesauce
  10. 1 teaspoon of baking soda
  11. 1 pinch of fleur de sel
  12. 1 tablespoon cider vinegar
Preparation
  1. Preheat the oven to 180°.
  2. Mix together all the dry flour ingredients, starch, sugar, the yeast, bicarbonate and fleur de sel.
  3. Melt the chocolate with the margarine in a bain-marie then add the compote.
  4. Add this preparation to the dry ingredients, mix and dilute gradually with the vegetable milk then add the vinegar.
  5. Finish by adding the chocolate chips.
  6. Pour the mixture into muffin molds then finish by adding a little chocolate chips on top for a treat !
  7. Bake 20 minutes.
  8. Let cool and enjoy !

      Hello Sandrine, chocolate by 3 kilos is Valrhona, it can be found in any good self-respecting grocery store. !

    Bonjour, the chocolate must be carefully checked that it does not contain milk… given that it is made in a workshop that works on it. It does not say “possible presence” but although the milk is worked in the workshop so it is possible that it is in the chocolate if the workers are not careful during handling 😉

    Ouch ouch I love your vegan recipes !! They are perfect for Mr. who has some intolerances but remains a real gourmand 🙂 Question regarding these muffins, can we use the base to make muffins other than chocolate? ?
