Stir-fried soba noodles with eggplant {vegan}

Noël n’est plus que dans à peine plus d’un mois, le marché de noël a déjà prit place, la ville est illuminée de ses plus belles guirlandes oui mais voilà dehors il fait encore 20° !!! Bah moi avec ces températures, je ne ressens pas trop l’esprit de noël (bon ok pourtant je suis en pleine préparation d’un dossier noël rien que pour vous !) et j’ai encore envie de profiter de l’automne, de cet automne doux et ensoleillé. Alors sur les étals du marché, j’achète les dernières aubergines pour me faire un wok de nouilles soba sautées, just because that's what I want right now !
Eggplant needs acidity and in this dish it is the lime which adds its touch with slices of raw red onion… and how to tell you things simply…well just that this little dish of fried soba noodles is killer !!!


- 1 pack of soba noodles
- 2 eggplant
- 2 garlic cloves
- 1/2 Red onion
- The juice and zest of a lime
- 4 tablespoons of rice vinegar
- 2 tablespoons of sugar
- 1 little spoon of salt
- 1 drizzle of sesame oil
- 20 g sesame seeds
- 200 g smoked tofu (optional)
- 1 drizzle of neutral vegetable oil
- Mix together the rice vinegar, sugar and salt, mix until everything is dissolved. Then add the pressed garlic cloves, lemon juice and zest then set aside.
- Cut the eggplants into cubes, heat a drizzle of oil in a wok then brown the eggplants. Let it cook 10 minutes over medium heat, stirring often.
- Meanwhile, cook the soba noodles in boiling salted water for the time indicated on the packet.. Rinse them in cold water then drain.
- Add the smoked tofu cut into cubes to the eggplants and sauté 5 minutes.
- Finally add the noodles, seasoning, sesame seeds and finely chopped red onion.
- Stir well and serve immediately.

25.11.14Eggplants are a bit of a headache for me, They don't inspire me, bitches ! Out of the good old ratatouille I remain discomfited in front of them ! We love each other, they and I, but the magic has difficulty operating ! So I'm taking note of this recipe which could add a little spice to my eggplant relationship. !

26.11.14I admit that we haven't always been the best of friends, because like you, apart from ratatouille, I dried a little !!! I hope you like this little recipe because personally I loved it !

27.11.14Hmmmm, that’s really the kind of dish I love.!! With extra eggplant, I say bank!!! Personally my favorite eggplant dish remains eggplant alla parmiggiana!!
