Sourdough Pancakes {vegan}
Je suis sûre que vous êtes beaucoup à avoir commencé un levain depuis le début du confinement. Vous avez même sûrement tenté de faire votre pain avec votre levain tout neuf, là je vous propose une recette de pancakes au levain, afin d’utiliser votre levain chef en trop, après les rafraîchis. Oui parce que ça me crève toujours le cœur de jeter du levain, alors qu’on peut l’intégrer à plein de choses, comme ces pancakes au levain, crepes or une focaccia !
Les pancakes, c’est notre petit déjeuner du dimanche matin 365 jours par an,
(366 cette année d’ailleurs !) and this recipe has become our favorite recipe of the moment. We make the dough the night before before going to bed, basically it takes 5 min, we leave to ferment all night and in the morning the dough is ready to be cooked. In addition, these pancakes keep very well and they are still delicious the next morning. (I keep them covered with a cloth), and that I can tell you that it's not bad to have pancakes for breakfast on Monday morning !
Sourdough Pancakes {vegan}
FOR TWENTY
- 400 g of flour (here T80)
- 550 ml of vegetable milk (soy or almond)
- 70 g chilled sourdough
- 4 tablespoons of whole sugar
- 4 tablespoons neutral vegetable oil
- 1 pinch of vanilla
- The night before : Put the flour in a bowl and make a well. Add the sugar in the center, vanilla, oil and leaven.
- Mix little by little with the milk to obtain a smooth paste without lumps.
- Leave to ferment overnight in the fridge.
- The next morning : Heat a little neutral oil in a frying pan. Place a small pile of dough in the center and cook for approx. 2 minutes over medium heat (small holes should form on the top).
- Flip the pancakes and cook 30 second more.
- Repeat until the batter is used up..
- Enjoy hot with maple syrup for example !
