Scallion pancakes {vegan}

Voilà une recette que j’avais envie de tester depuis bien longtemps, les scallion pancakes. Alors on dit pancakes, mais en réalité rien à voir avec une pâte à pancakes liquide, c’est plutôt une pâte à galette, étalée finement, garnies ici de tiges d’oignons nouveaux, roulée et étalée d’une manière bien spécifique. Vous allez comprendre tout ça juste après, ne vous inquiétez pas. Originaires de Chine,
on trouve les scallion pancakes principalement dans les stands de street food,
et on les sert accompagnés d’une sauce soja épicée. Scallion pancakes {vegan}
POUR 10 PANCAKES
- 600 g of flour T65
- 380 g hot water
- 5 g de sel
- 3 tablespoons of flour
- 10 cl of neutral vegetable oil
- The green stems of 6 spring onions
- frying oil
FOR THE SAUCE
- 10 cl fermented soy sauce
- 1 tablespoon sesame seeds
- 1 chiseled aillet or a crushed garlic clove
- 1 teaspoon of chili flakes
- Put hot water, salt and flour in a bowl and knead either in a robot with a hook or by hand to obtain a smooth paste. let stand 1 h covered and at room temperature.
- Meanwhile mix 3 tablespoons of flour with oil in a bowl and chop the onion rods and set aside.
- Divide the dough into 10 dough.
- Spread the dough finely in a rectangular strip.
- Add a spoon of the oil/flour mixer and spread from everywhere.
- Then put onions chopped on the dough and roll from the largest width.
- Then roll this band on itself to form a snail.
- In a pan, Heat a good drizzle of frying oil and cook your snails one by one. To do this put in the pan over medium heat, let it cook 2 minutes on the first side, Return and flatten strongly to form a pancake (I flattened mine with a blinis frying pan) and let cook 2 more minutes.
- For the sauce mix all the ingredients together and taste with the still warm pancakes scallion.
